Zona di produzione: Tenuta di Naturno della cantina Falkenstein (zona della Val Venosta). Tipologia terreno: Pietrosi e ripidi. Altitudine: Tra i 600 e i 700 m. s.l.m., in una zona ventilata e ben soleggiata, che garantisce notevoli escursioni termiche tra le temperature del giorno e della notte e un’ottima maturazione delle uve. Vendemmia: Manuale, verso la metà di settembre. Vinificazione: Fermentazione in grandi tini di rovere, con follature manuali e un periodo di macerazione sulle bucce della durata di 3 o 4 settimane. Affinamento: In barrique e tonneau di rovere francese per circa un anno, poi 7 mesi in vasche d’acciaio e completa l’affinamento con un anno in bottiglia prima di lasciare la cantina.
Zona di produzione: Alto Adige. Resa: 42 hl/ha. Orientazione: Sud - Ovest. Pendenza: 0 - 5 %. Altitudine: 250 - 270 m. s. l. m. Vendemmia: Selezione delle uve manuali. Vinificazione: Diraspatura dei grappoli e successiva fermentazione lenta in cisterne di acciaio inox a temperatura controllata e con movimentazione delicata del mosto. Fermentazione malolattica e affinamento per 18 mesi in barrique. Per l’affinamento in barrique si utilizzano per un terzo botti nuove. Assemblaggio tre mesi prima di imbottigliare.
